Sausage Soup Sunday

Today is a rainy, wet, great soup kind of day.  We just got home from finishing the 2012 Maine Half Marathon.  It was a beautiful course, very well organized, however going into it, we were a bit nervous.  Aside from CrossFit, we didn't do a very good job for training. We have been doing quite a bit of rowing at the gym, but its not running.  By the grace of god, we completed it in just over 2hrs!  We pulled each other along (ok, ok I may have pulled Joe along for about 10 miles ;)  As I noted earlier, it was a very WET race.  It was sprinkling from the start, but around mile 7, the sky just opened up.  I really felt for the marathoners who had about another 3 hours of running. Yuck!  So after drying off, Joe suggested making some soup.  We LOVE this recipe, and can hardly believe its paleo.  It mimics Bertuccis sausage soup, minus the noodles!

Turkey breakfast

So sometimes you have those mornings you just don't feel like housing a bunch of hard boiled eggs. I tend to get really tired of hard boiled eggs, but the ease of them
Is undeniable. (I think Joe could eat hard boiled eggs everyday and be perfectly happy!). I am constantly trying to find and come up with new recipes to throw on containers to easily grab in the morning.
This one was inspired from a stuffed acorn squash recipe. It was from the "paleo comfort foods" cook book. It was probably one of the most tasty things I have made! The recipe calls for sausage but I had ground turkey on hand, so whala, the turkey breakfast is born!

Crockpot Chili!

So the feeling of fall is in the air, football was on TV.  I felt inspired to make a chili. In the past, I have made chili, but never 100% paleo.  I had always added things that would "un-paleotize" it.  So this time, I was determined to keep it 100% paleo.  Aside from using the tomatoes from a can (from traders at least!) I think I succeeded!  It tasted delicious and Joe and I have enough chili to last us a while now!
