I would highly recommend using one from a local farm, not the commercial brands. The commercial brands have a TON off added ingredients, such as high fructose corn syrup. They do sell the real stuff at whole foods, trader joes, some supermarkets should have it as well (but it will be much more expensive!) So support your local farmers and see if they have some!!

Sweet Potato Hash

2 large sweet potatoes

1 onion

6-7 pieces of bacon

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon ginger

1 teaspoon cinnamon

1-2 table spoons of maple syrup (this can be optional, it makes it a slight different dish, but still yummy, without it!)

** If you do not want to cook the onions and hash in the bacon drippings, you can use coconut oil or extra virgin olive oil!

Preheat oven to 350 F.

Peel and shred the two sweet potatoes into an oven safe baking dish (I used a glass dish)

Squeeze excess moisture out with a paper towel and then place in the oven while you cook and slice your bacon.

Cook your bacon in a large pan. Don’t toss your bacon drippings we are going to use them to cook the hash in. After the bacon is done, throw the slices in a food processor to make into small pieces.

In the same pan, turn up the heat a bit and cook the onions in the bacon drippings, it should only take a few minutes. (If you had super greasy bacon, feel free to remove some of the drippings!)

Remove the sweet potatoes from the oven and add them to the pan with the browned onions.

Next add your seasonings and combine. Do a taste test and add more if desired. When you are happy with the taste of the spices, use a spatula to flatten out the sweet potato and onion mix into the pan and press down to make it as flat as you can. Let it sit for a few minutes until the bottoms are brown. Then mix again and repeat this process until the sweet potato becomes hash brown like and cooked through.

Once the hash is cooked and browned, toss in the bacon and combine.

Yummo!
