Sunday Morning Pancakes

It was a gorgeous fall, crisp Sunday morning.  We need to rake some leaves today, and let me tell you. We have A LOT of trees.  Oh, things that you don't need to worry about when renting!  I don't think you can see one inch of grass in the front or back yard.  So we needed some good food to get us going for the day.  I found this original recipe on Pinterest and it was only bananas and eggs, and that was it!  I decided to put my own spin on it not only to make a few more, but to add a little more flavor.    These were by far the best paleo pancakes I've made!!

Ingredients: (Yields about 12 pancakes)
  • 2 Bananas
  • 4 eggs
  • 2 table spoons Coconut Flour
  • 2 teaspoon of vanilla extract
  • A few shakes of cinnamon
  • Coconut oil, for cooking

  1. In a food processor add the banana and the eggs and mix until creamy.  
  2. Add in the coconut flour, vanilla and cinnamon and mix until smooth.
  3. While your mixing the ingredients, have your griddle heating.  Put some coconut oil where you'll be pouring your pancakes.
  4. On your greased, hot griddle pour the mixture into sections.  Each side can take anywhere from 8-10 min. Once the pancake comes free off the griddle, flip it. Be careful not to burn!!

I heated up some apples, cinnamon and coconut oil for a topping.  Joe just had maple syrup!
Enjoy however you wish!  This recipe is adaptable to add any type of fruit inside as well, apples blueberries, even some chocolate chips!

So what happens if I use regular flour and I don't have coconut oil either. I gave it to you! bill doesn't like it. when Brooke made us these she added blueberries. they were delicious! I like your idea for "syrup". Bill has sugar free syrup but I am not sure he likes it.
