The Open is here!  and an Eggless Breakfast

Day light savings week.  I have definitely been dragging ass.  Its only an hour, but man!  It is exciting to drive home in the daylight and if our workout involves running, to run in the light!  So... The CrossFit open is here!  Last week, the first workout was announced.  It was a 17 min workout that involved some burpees and a snatch ladder.  I will say, I was extremly happy with my performance. I wasn't able to contribute to our team score, but for myself it was a huge improvement from last year.   Overall, our comp team did really well!  Currently, we are 25th in the region!  We need to stay in the top 30 to go to regionals. Tonight week 2 gets announced.  Wonder what it will have in store!

With that being said, when working out this hard you need to fuel your body properly.  Lately, I feel I have been lacking energy, so I decided to up my carb intake.  Eating paleo - sometimes we don't get enough carbs, and as an athlete, we need them.  So I added some quinoa into my diet. This is a controversial food that could go either way.  My advice is that is your working out hard, it's a good addition however is you main goal is weight loss then I would eat this in moderation, if at all.  It is gluten free and it's considered a seed but there are some articles that say it isn't paleo due to the fact that it could contains anti nutrients that if consumed in high amounts regularly could link to a "leaky" gut and cause slight inflammation. So use your judgement!

Eggless Breakfast

  • 1 cup quinoa
  • 2 med sweet potatoes
  • 1 red onion
  • 1 head of kale
  • 1 med apple
  • 1 1/4 cups of chicken broth (1 can)
  • 2-3 cloves of garlic
  • Olive oil
  • As many sausage links as you would like (I used 5)
  • Salt n pepper

  1. In a pot, bring the cup of quinoa and broth to a boil. Once soft, set aside
  2. In a frying pan, cook your sausage and dump the grease.
  3. In another frying pan, cover with some evoo and throw in the chopped sweet potatoes, garlic, onions and sauté until slightly soft.
  4. De-rib the kale as chop up the apple, throw in the mix when the sweet potatos are a bit soft and sauté until the apples get a little soft.
  5. Once done, mix in with the quinoa and chop up the sausage and mix together, salt and pepper to taste and your breakfast is served!
Note:  if you can't have, or don't eat/like sausage feel free to leave it out.  I would add a bit more pepper and a touch of olive oil and it will still be great!

Hi Danielle! It was about 6 good sized servings. It will last for almost a week of breakfast :)

Again, like quinoa - sweet potatoes are high in the carb category. Sweet potatoes are lower on the glycemic index than regular white potatoes, so that is why they are considered paleo.. Hi Debbie -
I apologize for not getting back to you sooner, I didn't see the comment until now! As far as quinoa goes, its a very controversial food in the paleo world. My suggestions (completely my opinion!) are if your working out hard, it a great source for some extra carbs and protein. If weightloss is a goal, then I would limit this. But it is a seed, its gluten free, and has a lot of nutritional value.
